Also add a wrapper script, fsstress.collect-crashes.sh, to collect
the debug output.

We would hang like this
./fsstress-loopback.bash
Recompile go-fuse loopback: v2.0.3-7-g0b6cbc5
Waiting for mount: xxxxxxxx^C
if TMPDIR has a trailing /. The reason is that the
paths in /proc/self/mounts are normalized, while
TMPDIR may not be.

To make the used go-fuse version clear in logs,
print it on startup, similar to what we do with gocryptfs.

Apparently, kernel 5.8 now allows unprivileged "mknod /tmp/x c 0 0":
vfs: allow unprivileged whiteout creation
https://git.kernel.org/pub/scm/linux/kernel/git/stable/linux.git/commit/?h=v5.8.9&id=a3c751a50fe6bbe50eb7622a14b18b361804ee0c
which is why rm throws a new prompt:
rm: remove write-protected character special file '...'?
Use rm -Rf to suppress that.

Broken mounts may accumulate when the fs crashes.

No longer supported by go-fuse loopback.

There is a good chance that /tmp is tmpfs, and we want to
run our tests on a real filesystem.

I have added a subset of fsstress-gocryptfs.bash to EncFS as
fsstress-encfs.sh, improving the code a bit.
This change forward-ports these improvements to
fsstress-gocryptfs.bash.

May be helpful for https://github.com/vgough/encfs/issues/214 .

Mac OS X does not have fusermount and uses umount instead.
The fuse-unmount.bash calls the appropriate command.

The primary use is testing gocryptfs, after all.

Running these tests from integration_tests' TestMain() was awkward
because they were run twice with unchanged settings.
integration_tests tests everything with OpenSSL and with native
Go crypto, but this does not take affect for the example filesystems.
To make this work, test_helpers is also split into its own package.
